Food Chemistry: French Toast PB&J Banana Sandwich

This is the blog post written for the summer course I am taking, Food Chemistry. We were tasked with transforming a recipe to fit certain parameters and dietary restrictions given to us, and identifying chemical and physical changes during the cooking process. For my project, I have chosen a recipe for making french toast peanut and butter and banana sandwiches.

French Toast PB&J Banana Sandwich (1 serving)

Ingredients:

2 slices of bread

1 banana

Jam

Peanut Butter

1 egg

1 tbsp milk or whipping cream

Instructions:

1. Smear peanut butter all over one side of one of the slices of bread, and jam on one side of the other slice of bread

2. Dice the banana into slices 1-2 cm thick and place them in even amounts of both slices of bread (on the sides with the spreads)

3. Crack the egg into a bowl and mix the yolk and white

4. Add the milk or whipping cream into the bowl and mix with the egg

5. Pour the mixture into a saucer large enough to accommodate a slice of bread

6. Drown the slices of bread in the saucer (with the side with the spreads face up)

7̶.̶ ̶E̶v̶a̶d̶e̶ ̶t̶h̶e̶ ̶c̶o̶p̶s̶ ̶a̶t̶t̶e̶m̶p̶t̶i̶n̶g̶ ̶t̶o̶ ̶a̶r̶r̶e̶s̶t̶ ̶y̶o̶u̶ ̶f̶o̶r̶ ̶t̶w̶o̶ ̶c̶o̶u̶n̶t̶s̶ ̶o̶f̶ ̶b̶r̶e̶a̶d̶ ̶m̶u̶r̶d̶e̶r̶

7. Fry the slices of bread with the egg-dipped side face down on low heat until the egg is fit to eat

8. Press the slices of bread together to make the sandwich

The dietary restriction I have to modify my recipe to fit is veganism.

Vegan French Toast PB&J and Banana Sandwich (1 serving):

Ingredients:

2 slices of bread

1 banana

Jam (make sure that it contains no gelatin)

Peanut Butter

French Toast Batter:

0.2 tsp vanilla extract

0.2 tsp ground cinnamon

0.6 tsp agave nectar/maple syrup

1 tsp chia seeds

5 tbsp almond milk

Instructions:

1. Smear peanut butter all over one side of one of the slices of bread, and jam on one side of the other slice of bread

2. Dice the banana into slices 1-2 cm thick and place them in even amounts of both slices of bread (on the sides with the spreads)

3. Mix the ingredients for the french toast batter in a saucer

4. Place the batter mixture into a fridge for 10 minutes

5. Contemplate life choices while waiting for batter to activate. Existential crisis optional.

6. Dip the slices of bread in the saucer (with the side with the spreads face up)

7. Fry the slices of bread with the egg-dipped side face down on low heat until the egg is fit to eat

8. Press the slices of bread together to make the sandwich
